Riesling

Small in size, yellow in color, and with low production. In Spain, it produces dry, fruity, fresh, and floral wines, but less complex and elegant than in Europe. In cold climates, the wines have a fresh character, apple aromas, and high acidity. In warmer regions, the wines are more citrusy and have hints of peach. With Riesling, dessert wines are made from botrytis-affected grapes, which stand out for their unique notes of honey, smoke, and aging potential. In the Catalan region of Penedès, special wines called Vi de gel (in the style of German ice wines) are made through a particular cultivation and winemaking process that involves late harvesting when the grape has frozen on the vine.
