The pagos Macharnudo and Carrascal, two of the most coveted in the Jerez region, are the exquisite origin of Tío Pepe Fino Una Palma 2023. For its production, the emblematic winemaker of the Cádiz winery, Antonio Flores, decided to select three barrels from the 139 that the house has. For six years, the wine aged in barrel No. 9, 7, and 10, maturing in the stillness of the Tío Pepe Winery. The result is a sensational fino that showcases the intensity of biological aging, with organoleptic qualities that have made it a benchmark.
Manuel María González founded González Byass in 1835 with the aim of doing business with the Jerez wines so demanded by England. González acquired a small winery and partnered with an English agent named Robert Blake Byass. At this moment, the González-Byass firm was born. Currently, the fifth generation of the family is at the helm of the Spanish wine empire, which has a wide range of wineries in some of the country's most important denominations of origin.
This gold-colored fino with a fresh nose is part of the D.O. Jerez-Xérès-Sherry, and has received high scores from specialized critics. Tío Pepe Fino Una Palma 2023 enhances the most classic harmonies. Ideal to accompany Iberian ham, seafood, marinated meat, ceviches, and seafood rice dishes.
Tío Pepe Fino Una Palma boasts a pale gold color. Its nose is fresh, with citrus and floral notes. A sharp and incisive wine with clear hints of "flor" yeast and dried fruits. On the palate, it is very dry, long, persistent, and flavorful. The intensity of the biological aging gives it the typical characteristics of a textbook fino.
