Pairing

The carefully selected Santa 2020, made from Monastrell with a touch of Garnacha Tinta Roja and aged for 14 months in new French and American oak barrels, calls for a place at the table in a lively, rustic setting where dishes with deep flavours and characterful meats shine. It pairs excellently with roast lamb, grilled veal fillet, braised cheeks, or lamb chops, and is also particularly suitable with mature cheeses. This red wine is ideal for dishes with presence and a persistent finish.

Making process

Aging

From Bodegas Castaño’s high-end and very limited production range, Santa 2020 was matured for 14 months in new French and American oak barrels, a crianza that contributed finesse, notes of fine woods, and that toasted nuance that accompanies its aromatic profile; it was then bottled in 07/2022 before being released to the market. A red wine with precise craftsmanship and well-defined character.

Vineyard

Description

Santa 2020 stands out for its Mediterranean profile and its production from Monastrell and Garnacha Tintorera, indigenous varieties of the D.O. Yecla that reflect the character of Bodegas Castaño and its commitment to very limited productions. The wine is based on the region’s identity and the winery's work with these grapes, which provide freshness, balance, and a pronounced aromatic expression to the overall profile.

Climate

In the D.O. Yecla, where Bodegas Castaño produces this red wine, a Mediterranean environment prevails, characterised by water scarcity and the pursuit of more sustainable cultivation practices. This context necessitates precise work to maintain the vineyard’s balance and make the most of the available resources.

This climate helps to distinctly express the native character of Monastrell and Garnacha Tintorera.

Viticulture

Santa 2020 champions sustainable viticulture rooted in tradition. Bodegas Castaño cultivates its vineyards with a clear focus on environmental respect, reducing energy consumption and the use of a scarce resource in the region such as water. This philosophy also naturally supports organic cultivation. The wine is made from Monastrell and Garnacha Tintorera, native varieties that reflect the character of the D.O. Yecla and the winery’s extensive experience in vineyard management.

The winery

Bodegas Castaño
Bodegas Castaño is one of the benchmarks in the Mediterranean wine sector and a spearhead of the D.O. Yecla due to its trajectory and achievements with the area's native varieties, primarily monastrell.

Ramón Castaño Santa founded the winery in 1950. In the mid-seventies, he acquired his first vineyards, and in 1980 he began bottling. After several generations connected to the world of wine, the Castaño family has successfully adapted the legacy of previous generations by incorporating new technologies and the most modern winemaking systems to enhance their magnificent viticultural heritage. Currently, they have 600 hectares of vineyards and market around 90% of their production in the international market.
