General Information

The fino Tío Pepe is a true classic. A wine with aromas reminiscent of almonds, dry and light, perfect to accompany Spanish omelette, fish soup, boiled prawns, pâtés, salmon, ham, cheeses, and nuts. A true icon of popular culture, highly rated in specialized guides (94 points in the Guía Peñín 2014).

Tío Pepe ages for four years in American oak casks, in the traditional system of criaderas and soleras, under a layer of yeast called 'flor' that isolates the wine, protecting it from oxidation.

Founded in 1835 in Jerez by Manuel M. González, González Byass is a true cathedral of wine and one of the most visited wineries in the world. Inside, true cult objects are produced, such as the VORS Noé and Matusalem, in addition to distilled spirits like Soberano and Lepanto. Currently, the González Byass group comprises a wide range of wineries producing in different denominations of origin: Beronia in D.O.Ca. Rioja; Viñas del Vero in D.O. Somontano; Vilarnau in Catalonia; Finca Constancia in Toledo, etc.

Tasting notes

Pale yellow color with greenish reflections.

Clean and sharp on the nose, aromas of noble aging in flor, notes of cabello de ángel, with hints of nuts (almond), marine and saline touch.

On the palate it is dry, tasty, fluid and light, with good balance, aromatic and clean on the retronasal passage. Elegant bitterness and saline tip on the finish.
