Callejuela Amontillado Origen is a fantastic fortified wine produced by the Callejuela winery in the town of Sanlúcar de Barrameda, Cádiz. It is made with the best selection of Palomino Fino grapes from three unique and proprietary vineyards: Macharnudo, Añina, and Callejuela. This amontillado comes from the solera of the manzanilla pasada Blanquito with a biological aging of 12 years. Its high alcohol concentration and the evolution of the wine in subsequent aging processes offer a beautiful topaz color, finesse, and character.

Callejuela Amontillado Origen is an exceptional amontillado from the Callejuela winery, made entirely from the palomino fino variety from three different vineyards: 30% Macharnudo, 50% Añina, and 20% Callejuela. Grown on limestone soils and with an Atlantic climate but with Mediterranean influence, this fortified wine exhibits very saline notes along with caramel touches.
The Callejuela winery was founded in 1980 by Francisco Romero Blanco, the head of the family who began vinifying musts in humble facilities in Sanlúcar to sell them in bulk to the large wineries in the area. Today, the third generation of 'los blanquitos' owns more than 28 hectares of vineyard and 700 barrels where they produce their great wines. Their philosophy in producing these fortified wines is the same as always and is characterized by giving the importance it deserves to the land, the field, and the vineyard. To achieve good aging, there must be quality grapes.
Callejuela Amontillado Origen is a fortified wine that falls within the D.O. Manzanilla Sanlúcar de Barrameda. The harvest is delayed as much as possible so that the wine does not lose its uniqueness and strength during its traditional biological aging, with the aim that this amontillado gives the importance it deserves to the soil and the work in the vineyard. After obtaining the must, it is aged under the solera and criadera system for an average of 12 years. During that time, it has aged under a layer of flor and through oxidative aging, giving this amontillado a certain complexity. Callejuela Amontillado Origen pairs ideally with all kinds of appetizers, Iberian acorn-fed ham, and blue fish dishes.
