From his youth to the present, Javier Sanz has been updating this inherited knowledge through advanced viticulture courses, combined with the daily practice of tending to his own vineyard.

Javier Sanz Cantalapiedra embodies the figure of the winegrower, convinced of the differentiation of his wines through viticulture. For this reason, he has dedicated the last ten years of his life to studying plant genetics, recovering nearly extinct varieties, and offering distinctive wines directly from the vines. Additionally, Javier Sanz Cantalapiedra preserves as a jewel of viticulture and his family heritage a pre-phylloxera vineyard, dating back to before 1863, a metaphor for his family history and a link to viticulture.
