Javier Sanz Viticultor Sauvignon Blanc 2024 is an example of the perfect adaptation of the French variety to the lands of Rueda. Its remarkable freshness and great fruity presence set it apart from the other white wines produced by the winery Javier Sanz Viticultor, one of the benchmark wineries in the region.

The variety used to produce Javier Sanz Viticultor Sauvignon Blanc 2025 originated in France over 40 years ago. The vines cultivated by Javier Sanz Viticultor are located in the Paraje del Camino Real, a vineyard with stony soils where this foreign grape variety with a short vegetative cycle has adapted exceptionally well. Additionally, the continental climate of the area allowed the grapes to retain their acidity and full aromatic profile, qualities that are reflected in the wine.

At the Javier Sanz Viticultor winery, the process of creating this fantastic single-varietal sauvignon blanc began with nighttime harvesting of the grapes to preserve their freshness as much as possible. The meticulous production process included cryomaceration of the fruit, clarification of the must obtained by gravity, and a slow fermentation in stainless steel tanks at a controlled temperature below 15º to preserve the varietal's aromas to the fullest.

Due to its organoleptic characteristics, Javier Sanz Viticultor Sauvignon Blanc 2025 is a white wine from Rueda that pairs exceptionally well with mollusks or seafood, whether raw or lightly cooked, such as prawns or crab, grilled white fish, cold dishes like gazpacho or vichyssoise, and goat cheese salad.

Tasting notes

Visually, it stands out for its pale yellow color with greenish highlights.

On the nose, the characteristic aromas of the variety dominate (lime, grass, white flowers), along with notes of tropical fruit (pineapple, passion fruit).

The good acidity on the palate enhances the sensation of freshness and accentuates its citrus and tropical flavors. Medium-bodied with a pleasant floral and mineral aftertaste.

The winery

Javier Sanz Viticultor

Led by Javier Sanz, the fourth generation of a family of winemakers, it boasts 104 hectares of its own vineyards distributed across a mosaic of plots located in the Valladolid municipality of La Seca (D.O. Rueda). A significant portion of these vineyards are pre-phylloxera (over 150 years old), inherited from his great-grandfather.

The essence of the wines from Javier Sanz Viticultor lies in the unique approach to viticulture, based on quality guidelines passed down from generation to generation. This care for the family-owned vineyards translates into wines with personality, connecting quality with a distinctive style. The winery produces single-varietal wines with minimal intervention and uses native yeasts.

The verdejos from Javier Sanz Viticultor have received prestigious national and international awards, such as a Zarcillo de Oro, several gold medals at Selections Mondiales des Vins Canada, a gold medal at the Concours Mondial de Bruxelles, and other recognitions.
