Pouilly-Fumé is a French appellation recognized in 1937 that encompasses wines produced in the commune of Pouilly-sur-Loire, in the Nièvre department, Burgundy region. The queen grape of the A.O.C. is the white sauvignon blanc, which covers a vineyard area of 1,200 hectares. Pouilly-Fumé wines are characterized by their minerality, balanced acidity, and a distinctive aroma of gunpowder or, as the French say, pierre à fusil.
