Pascal Jolivet

Pascal Jolivet is a winery based in Sancerre, on the left bank of the Loire River. It was founded in 1987 by the winemaker Pascal Jolivet. In 1991, the winery produced its first vintage, characterized by the use of 100% indigenous yeasts and temperature control during fermentation. Soon, the distinctive style of Pascal Jolivet's wines began to be appreciated by specialized critics, with some of its creations making it onto the list of the 100 best wines of the magazine Wine Spectator for two consecutive years, 1995 and 1996.

Currently, the winery owns 65 hectares of sauvignon blanc vineyards, spread across the appellations of Sancerre, Pouilly-Fumé, and Touraine, and features new, modern gravity-fed winemaking facilities, from grape reception to bottling.
