Roger Goulart Demi Sec Reserva 2023 is a semi-dry cava essential for those seeking a sparkling wine with personality and balance. This style, increasingly rare, is characterized by its sugar content, between 32 and 50 grams per liter, which provides a pleasant sweetness without losing freshness. The winery maintains this reference within its most classic range, crafted with the same rigor as its most emblematic labels.
For its creation, Roger Goulart relies on the traditional Penedès coupage, with a predominance of xarel·lo, accompanied by macabeo and parellada. Each variety is harvested separately at its optimal point, always at dawn to preserve freshness, and fermented at low temperature for more than ten days. After the tirage, the cava undergoes a second fermentation in the bottle and a minimum aging of 14 months in underground cellars at a depth of 30 meters, with a constant temperature of 14 ºC. The result is this Roger Goulart Demi Sec Reserva 2023, a refined sparkling wine under the D.O. Cava, produced in the Anoia and Foix river basins, where the vineyards are located between 300 and 700 meters above sea level and are cultivated under sustainable practices.
Roger Goulart Demi Sec Reserva is a cava with a pale yellow color and greenish reflections, clean, bright, with a good release of fine bubbles and a slight formation of a crown on the surface. On the nose, it is very fresh, with intense notes of fresh white fruit, slightly floral, and a background of yeast and bread aromas. On the palate, it is sweet due to its high sugar content, but with a lively acidity that makes it full-bodied. Persistent finish with very fruity notes on the palate and hints of brioche.
The cultivation of vines at the Masía de Can Goulart dates back to the 18th century, specifically to 1882, when the Canals family acquired the cellars, making it one of the first sparkling wine producers in Spain. The Canals family still owns the cellars today. Its impressive 1920 building, designed by architect Ignasi Mas Morell, is a prime example of Catalan agrarian modernism and one of its main attractions. Roger Goulart does not own vineyards nor produce the base wine, although he closely follows the entire process. To craft this Brut Nature, he uses the classic trio of regional varieties (Parellada, Xarel.lo, Macabeo), which each contribute distinct qualities: structure, silkiness on the palate, and aromatic finesse.
