General Information

The xarel·lo grape that originates Raimat Lo Fred de Ponent comes from vines over 25 years old located in the westernmost part of the Catalan municipality, in one of the coldest estates of the Raimat winery. Thanks to this microclimate and the shallow, loamy-textured soils, a cava of certain complexity and firmness against aging is achieved.

Vinification begins with an early harvest, in early August, and at dawn to take advantage of the cool temperatures, thus avoiding the oxidation of the fruit. After a gentle pressing, the resulting must is fermented in stainless steel tanks to maintain the grape's aromas. After another fermentation, but now malolactic and a minimum aging of 15 months in the Raimat cellars, an extraordinary cava with a citrus profile, herbal aromas, and great acidity will be obtained.

The winery Raimat is a pioneer in oenological technology, which has made it one of the great centers of research and development in viticulture in Spain. In addition to its search for new oenological paths, the firm is one of the leading exponents in producing high-quality wines in Catalonia, with a clear commitment to respect for the environment and nature.

This clean and fresh xarel·lo varietal under the D.O. Cava stands out for its good balance between robustness and elegance. Raimat Lo Fred de Ponent is a gastronomic sparkling wine ideal as an aperitif or with meals featuring white meats, fish, rice, and pasta.

Tasting notes

Bright straw yellow color, with fine and elegant bubbles.

On the nose, it unfolds notes of hinojo, thyme, underbrush, and faint notes of stone fruits.

On the palate, it is very fresh, clean, and with an excellent balance between structure and elegance.

When Manuel Raventós acquired the barren lands of the Raimat estate in 1914, in a desert-like area of Lleida, almost bordering the Los Monegros desert, few believed he was in his right mind. Almost 90 years later, Raimat is a thriving estate with 2,100 hectares dedicated to vineyard cultivation, still in the hands of the Raventós family, owners of the Grupo Codorníu.

The first Raimat winery dates back to 1918 and was designed by the eminent modernist architect Rubió i Bellver. A subsequent expansion in 1988, carried out in line with the latest trends in ecological architecture and landscape integration, gave the winery its definitive appearance. Raimat was one of the first brands to cultivate foreign varieties almost unknown in Spain at the time and to adopt trellis training, leaving behind the classic and traditional bush vine.
