It comes from old vineyards in the Paje Estancia Piedra, planted in 1968, with a plot in Pago de Bocarrage. Piedra Reserva 2021 is harvested by hand, in 20 kg boxes, during the second half of September. The selection of Garnacha Tinta and Tinta de Toro is carried out in the vineyard to maintain the quality of the grapes and to preserve the wine’s identity from the very beginning.
Winemaking
Piedra Reserva 2021 is defined in the winery by a precise vinification process, designed to produce a Reserva Red with a firm structure and elegant profile, where 75% Tinta de Toro and 25% Garnacha Tinta are integrated with balance.
The process starts with an 8-day fermentation in a 150 hl stainless steel tank, at a controlled temperature with frequent pump-overs. This dynamic promotes extraction while preserving the fruity expression of both varieties. Subsequently, the wine completes malolactic fermentation in barrel, resulting in a more rounded character.
All the steps aim to craft a wine suitable for those who appreciate a red with presence, definition, and a serene evolution in the cellar — built from technical precision and without excessive extraction.
