General Information

The great PX from Bodegas Hidalgo-La Gitana has a name, and it is Pedro Ximénez Viejo Triana VORS. Rated with 93 Parker points, this authentic gem of the D.O. Jerez-Xérès-Sherry acquired its finest qualities from the top-quality grapes with which it is made and from the aging process of over 30 years (hence its VORS classification) to which it was subjected.

The Pedro Ximénez grapes used by Bodegas Hidalgo-La Gitana in this wine come from a strict selection and were subjected to different degrees of sun-drying. The musts, rich in sugar, were slowly fermented at a controlled temperature, after which they were fortified with wine alcohol up to 15°.

The wine was finally aged using the traditional criaderas and soleras system for over 30 years in American oak barrels. This very long oxidative aging gave the Pedro Ximénez Viejo Triana VORS great body and an incredible velvety texture, without losing the freshness typical of the varietal. Each year, only 1,000 bottles of this magnificent natural sweet wine are filled, making it ideal to sip on its own, to prolong its palate, or to pair with blue cheeses, desserts, ice creams, and pastries.

Tasting notes

Dark mahogany color with iodized reflections, dense tears that stain the glass with an amber hue.

Powerful and complex nose, while clean and intense. Predominance of aromas typical of aging, raisins, dried fruits, toffee, and noble woods.

On the palate, it is intense, velvety, dense, very sweet. Clear notes of plums and raisins with a very persistent finish.

The winery

The uniqueness of Spanish biologically aged wines is appreciated and admired worldwide. La Gitana is a clear example of winemaking tradition and contemporary flavors that continue to thrive, captivating and delighting enthusiasts. Bodegas Hidalgo-La Gitana boasts being one of the oldest wineries in the Jerez region. At the beginning of the 18th century, the pioneer of the lineage that would become one of the most important winemaking families in Sanlúcar de Barrameda, the Hidalgos, set foot in these lands. Since 1972, the family has been dedicated to the production of manzanilla, earning a well-deserved reputation as quality producers by the early 19th century. Since then, the winemaking method has not changed: grapes from their own vineyard, artisanal harvests, vinification through the solera and criaderas system, and manual rackings.
