Pairing

Its palate Laya 2024 is enveloping and juicy, with sweet tannins and a long finish. It pairs very well with roasted lamb, grilled lamb chops, Iberian presa, veal cheek, and hearty stews such as slow-cooked lentils or meat rice. It also complements cured cheeses and Iberian cured meats. The combination of Garnacha Tintorera and Monastrell calls for flavoursome dishes, with good intensity and a toasted touch.

Making process

Winemaking

Laya 2024 is crafted as a unique coupage of Garnacha Tintorera and Monastrell, designed to create a red wine with a pronounced personality, complexity, and good structure. At the winery, both varieties are macerated and fermented separately in stainless steel tanks with temperature control, allowing precise management of each component. The malolactic fermentation then completes the process, helping to preserve the wine’s intensity and aromatic expression.

Aging

Are you looking for a red wine with a short ageing that preserves freshness and structure? Laya 2024 is made with maceration and fermentation carried out separately in stainless steel tanks with temperature control. After malolactic fermentation, it undergoes a brief ageing in French oak barrels before release to the market.

Vineyard

Description

Laya 2024 is a peculiar blend of Garnacha Tintorera and Monastrell produced in the D.O. Almansa by Bodegas Atalaya, a proposition that stands out for its intense personality, good structure, and fresh, balanced character. The assembly of these indigenous varieties results in a very deep-coloured red, with notable aromatic complexity, an enveloping palate, and a long finish, the result of careful production involving maceration and fermentation separately, followed by malolactic fermentation and a brief passage through French oak barrels.

The winery

Bodegas Atalaya

Bodegas Atalaya is part of Juan Gil Bodegas Familiares. Miguel Gil is the most prominent figure of this thriving group, managed by the fourth generation of a lineage of passionate winemakers and viticulturists. Since his great-grandfather Juan Gil Jiménez founded the family winery (Bodega Juan Gil) in the center of Jumilla, 100 years have passed. In 2001, Miguel Gil took charge of the relaunch and modernization of the family winery Juan Gil and founded the winery El Nido.

After the creation of the winery El Nido, the group Viñas Familia Gil (formerly known as Juan Gil Bodegas Familiares) began to grow significantly, expanding into other designations of origin and always focusing on native grape varieties. In 2007, the Gil family arrived at the small D.O. Almansa (Albacete) and founded Bodegas Atalaya.

Bodegas Atalaya is located in Paraje Atalaya, 3 km north of the town of Almansa. Its vineyards grow at an altitude of 700 m, on low-fertility calcareous soils and in a continental climate with scarce rainfall, ideal conditions for achieving low yields and high-quality grapes with great concentration of color and aromas in the wines.
