A rosé to enjoy the best version of Ribera del Duero
Dominio del Pidio Rosado 2025 is a rosé made with Tempranillo (tinto fino) and Albillo Mayor from old vineyards in Quintana del Pidio (Burgos). After five months of maturation in French oak barriques, it combines freshness, precision and complexity. It stands out for its aromas of fresh fruit and flowers, and for a vibrant, balanced and persistent palate. An elegant rosé that reflects the character of its origin.
Dominio del Pidio Rosado 2025 is made from a careful selection of Tempranillo (Tinto Fino) and Albillo Mayor from old vines of Quintana del Pidio (Burgos), some nearly a century old. Planted at 880 metres above sea level on soils of a calcareous-clay and sandy nature, these vines produce very low yields, favouring greater concentration and expression in the wine.
The winemaking blends tradition and precision: part of the must ferments in concrete and another part in French oak barrels. Afterwards, the wine stays five months on lees in barrel, maturing in the historic 16th-century underground galleries that characterise the area.
Since its foundation, Cillar de Silos has been a reference winery in the modernisation of the Ribera del Duero. The project, begun by Amalio Aragón and continued today by his sons Roberto and Óscar, has stood out for its defence of old vines and the identity of Quintana del Pidio, where it is based.
With Dominio del Pidio, the family took another step in its commitment to wines of a specific origin, producing exclusively grapes from this Burgos municipality. At the same time, it has played a key role in the recovery of the Albillo Mayor variety and in the prestige achieved by the white and rosé wines of the region. A good example is this Dominio del Pidio Rosado 2025, a fresh, refined wine and very versatile at table, perfect to accompany seafood, rice dishes, fish or Mediterranean cuisine.
Cillar de Silos is one of the wineries that has revitalized Ribera del Duero since the 1990s. A winery established in Quintana del Pidio (Burgos), founded by Amalio Aragón, who in the 1970s, against the trend of his fellow villagers, began gathering the best plots of old tempranillo vineyards in the area instead of uprooting them. This is a privileged area for this variety, located at an altitude of almost 900 m, where the tempranillo benefits from a slow ripening process. The first wines of Cillar de Silos were released in 1995. Since then, the winery has continued to grow in quality and recognition.
Dominio del Pidio is the second winery that the family has established, exclusively dedicated to the production of village wines. This winery debuted with the 2014 vintage and only produces grapes from Quintana del Pidio, while Cillar de Silos also works with vineyards from nearby villages, such as Gumiel de Mercado.
