Raúl Pérez elevates the quality standards of the D.O. Vinos de Madrid with his red wine Carpetano 2019. Sourced from old vines located on the granitic soils of San Martín de Valdeiglesias and Cebreros, in the heart of the Sierra de Gredos, this single-varietal garnacha is produced at Bodegas Valquejigoso, one of the most interesting wineries in Madrid, completely underground. Manual harvest, double selection of the fruits, fermentation with stems, a prolonged maceration and an appropriate aging of 12 months in French oak barrels are the keys to its production.

Carpetano 2019 is a single-varietal Garnacha Tinta from Madrid, sourced from the San Martín de Valdeiglesias area in the Sierra de Gredos. These old vines, cultivated on granitic soils, endure extreme temperatures both in winter and summer, with limited humidity. These conditions result in low yields and fruits with great concentration and quality.
After a manual harvest with selection in the vineyards and winery, Carpetano is traditionally vinified, with a pre-fermentation cold maceration. The whole grape fermentation with its stems, in the presence of native yeasts, takes place in oak vats and small stainless steel tanks. After a long maceration, the wine ages in used French oak barrels for one year.
Carpetano is the result of the collaboration between the renowned winemaker and viticulturist Raúl Pérez and Bodegas Valquejigoso. The Madrid-based winery is a project of the Colomo family, committed to producing wines that faithfully express the personality of their different plots. Valquejigoso is the largest underground winery in Europe, located in the Madrid municipality of Villamanta and featuring a 38-hectare estate with vineyards of Cabernet Sauvignon, Tempranillo, Garnacha, Cabernet Franc, Petit Verdot, Merlot, Syrah, and Negral (a native variety of Madrid).
After participating in the creation of over 200 wines, Raúl Pérez once again demonstrates his talent with the creation of Carpetano 2019, a red wine under the D.O. Vinos de Madrid designation where Garnacha shows itself fresh, fluid, and full of minerality. Pair it with all kinds of cured meats, aged cheeses, red meat, and game dishes.
The largest underground winery in Europe is located in the Madrid town of Villamanta and represents the latest major commitment in the Community of Madrid to producing quality wines. The estate, covering 38 hectares, is planted with Cabernet Sauvignon, Tempranillo, Garnacha, Cabernet Franc, Petit Verdot, Merlot, Syrah, and Negral (an indigenous variety from Madrid).
