Ars Collecta Paraje Calificado La Fideuera 2014 is a unique brut cava handcrafted from selected xarel·lo grapes. Only 15 cavas in the country belong to a Paraje Calificado certified by the Ministry of Agriculture, and Ars Collecta La Fideuera 2014 is one of them. Ars Collecta Paraje Calificado La Fideuera 2014 is the result of an early harvest grape, collected in mid-August, which embodies the highest quality standards and great gustatory and aromatic potential. This cava, La Fideuera 2009, is characterized by an artisanal production process using xare·lo grapes from Alt Penedés, sourced from vines over 25 years old located in calcareous and noble soils, which provided the sparkling wine with structure and great richness.
The winemaking process is extremely meticulous due to the sensitivity of the xare·lo grape to oxidation. It begins with the selection of the highest quality fruits from the Paraje Calificado, harvested at night to prevent deterioration, and manually collected in small boxes. Once in the winery, the grapes are re-selected, cooled, and pressed in a pneumatic press, where the must ferments at 17º C. Subsequently, the classification of the grapes that will form the final coupage of the Ars Collecta Paraje La Fideuera cava is carried out.
Excellent work in viticulture and winemaking resulted in an outstanding cava aged under the shelter of the thick walls of what was the first cava of the Codorníu winery, for over 90 months at 14º C. From this jewel of the Alto Penedés, only 300 bottles are produced, offering great richness, good acidity, and elegance.

On the nose, notes of Mediterranean scrubland, fennel, thyme resin, anise, and white fruit stand out. When opened in the glass, aromas such as bay leaf and white pepper emerge.
On the palate, it is intense with a perfect balance between fruit and acidity. The bubble is delicate, creamy, and exciting. In the aftertaste, reminiscences of aromatic herbs and toasted tones appear.
