Carlos Moro started the Viña Caeira project in 2022. The winery is located in the Condado de Tea, one of the five subzones that make up the D.O. Rías Baixas, in the south of the province of Pontevedra; it is surrounded by the 2.2 hectares of albariño vineyards that form the Finca Pesqueiras, planted in 2005. These are pergola-trained vines tied to granite trellises, creating a beautiful landscape. The vines, now almost 20 years old, are strongly influenced by the oceanic climate.
In this characteristic albariño trellising system of the region, the green parts are positioned at a height of between 1.70 and 2.10 meters above the ground, forming a horizontal canopy. This allows them to capture as much sunlight as possible. It also keeps the vines away from soil moisture, helping to prevent fungal diseases. Additionally, the grape clusters hang loosely beneath the foliage, promoting good ventilation. The estate is situated at an altitude of between 150 and 300 meters and features granitic, sandy-loam soils, rich in clay and mica.
Since its acquisition in 2022, several renovations have been carried out at the winery to optimize production and improve the production process, making it more efficient, as sustainability and innovation are key pillars in all the wineries led by Carlos Moro.
The D.O. Rías Baixas is characterized by extreme land fragmentation, and the winery receives grapes from various small plots. For this reason, the loading dock, the scale, and the grape reception system have been completely renewed. From the selection table, the grapes are moved to the top of narrow but very tall tanks, which facilitate static settling by gravity. The aim is to filter the musts as naturally as possible so that fermentation starts at low temperatures in stainless steel tanks, for which a highly efficient cooling system has been installed. These fermentations help preserve all the aromas of the albariño grapes from Condado do Tea. The production capacity has increased from 100,000 to 400,000 kilos.
