He began his journey with the Vega Sicilia Group in 1990, serving as Technical Director for 18 years in various wineries of the Group: Vega Sicilia, Alión, Pintia, Benjamin de Rothschild-Vega Sicilia. In 2015, he parted ways with the Vega Sicilia Group to launch his two personal projects:
1. Xavier Ausàs Consultoría. Currently, he is an oenological advisor for various wineries, such as Ánima Negra (Palma de Mallorca), Domine Grand Boise (France), Marqués de Vargas (Rioja), Bodegas Conde de San Cristóbal (Ribera del Duero), Pago de Carraovejas (Ribera de Duero), Ossian (Rueda), and Bodegas Selección de Torres.
2. The creation of Ausàs Bodegas y Viñedos, belonging to the Ribera del Duero denomination of origin.
Throughout his professional career, his wines have achieved great recognition both nationally and internationally. In 2007, he was named the best oenologist in Spain, becoming one of the most renowned oenologists.
Graduate in oenology and viticulture (D.N.OE DIPLOME NATIONAL d'oenologie) from the Paul Sabatier University of Toulouse. Previously obtained the degree known as BTS (Brevet Thecnicien Superieur) in oenology and viticulture from the faculty of Bordeaux. It was an atypical training, necessary since at that time national oenology studies were very scarce. Thus, after finishing COU, completed 2 years of oenology and viticulture in Requena (Valencia) and finished training in the cradle of wine: France, undertaking internships at the Vega Sicilia winery.
