Univers 2017 is the wine with which Alejandro Muchada and David Léclapart began their joint journey. It is their initial wine, a way to represent the universe created by these magnificent winemakers in the Jerez region. Univers 2017 is an extraordinary white wine made with a great blend of old palomino and california, standing out for its salinity and purity. Equally remarkable is its fermentation in old solid steel champenoise tanks, which, together with the young vineyard it comes from and the type of soil, are the necessary ingredients to emphasize that salinity and the subtle touches of hydrocarbons and gunpowder, aromas so closely associated with the great albariza vineyards.

Univers 2017 is a sensational white wine made from the finest selection of palomino fino and california grapes from the lower area of its best vineyard, under the name La Platera, in the Miraflores estate, with albariza and lustrillo clay-limestone soils. The result is a fresh, saline, and elegant wine.

Muchada-Léclapart is the vision of two people united by the world of wine, who together, and fascinated by the terroirs and history of Jerez, decided to create an innovative project of still wines in Andalucía. David Léclapart (renowned French champagne producer) and Alejandro Muchada (an architect turned wine producer from Cádiz) make the perfect team, as one brings experience and knowledge of biodynamic farming and the other the expertise of the French school. Muchada-Léclapart owns some of the best vineyards in Sanlúcar de Barrameda, in the historic Miraflores estate, benefiting from a climate heavily influenced by the Atlantic Ocean. The Spanish-French team has restored 3 hectares of old vineyards with ancient selections of palomino fino and moscatel from Chipiona.

With a limited production of 5,150 bottles, this Muchada-Léclapart Univers 2017 is crafted using biodynamic and organic viticulture, fermented and vinified in steel tanks with ceramic interior coating for 9-10 months. With spontaneous fermentation and lees work, this remarkable white wine is bottled unfiltered and unclarified, offering a very saline finish. Univers 2017 pairs perfectly with all kinds of appetizers, baked and grilled white fish.

Tasting notes

Pale yellow color with slight turbidity, unfiltered and without transparency.

On the nose, fruity aromas such as pear stand out, with hints of ginger and a yeasty note.

On the palate, it is different and intense, with a good texture and a saline finish.

The winery

Muchada-Léclapart is the personal project of David Léclapart (a renowned French Champagne winemaker) together with Alejandro Muchada (a wine producer from Jerez, Spain). They form the perfect team, with one bringing experience and knowledge of biodynamic agriculture and the other the expertise of the French school.

The goal of this young and innovative team is to create a great white wine, without flor and without fortification, focused on the Jerez region and based on two essential characteristics: the Palomino grape and the albariza soil.

This winery boasts some of the best vineyards in Sanlúcar de Barrameda, in the historic Miraflores estate, and benefits from a climate strongly influenced by the Atlantic Ocean. The Spanish-French team has restored 3 hectares of old vineyards with ancient massal selections of Palomino Fino and Moscatel from Chipiona.

In their winemaking philosophy, they are clear: minimal intervention techniques, organic farming, adding a minimum amount of sulfur (less than 10% of the usual), without using selected yeasts or acids, preserving the lees, and bottling without filtration. With this delicate work, they manage to produce a sensational wine: a dry, saline, and mineral white with seductive and pleasant aromas, long on the palate, and highly gastronomic.
