Santiago Ruiz 2025 is crafted with Albariño, Godello, Loureiro, Treixadura and Caíño Blanco, a blend that aims to preserve the original spirit of this winery, one of the pioneers of the D.O. Rías Baixas. The fermentation takes place separately for each variety, and afterwards the wine rests on its lees prior to final blending.
It originates from vineyards in O Rosal, very close to the mouth of the Miño River. Covering 44 hectares in a well-ventilated and sunny area, with vines aged 20 to 25 years trained on a trellis system. Manual harvest and sorting at the winery help to maintain the personality of each grape, in a year of excellent health status and well-balanced musts.
The winery has been closely linked to the identity of the region for decades. In 1984, Santiago Ruiz created a wine that already reflected authenticity, and that label with a map remains a true symbol. Today, that legacy continues in a careful, approachable, and authentic production that stays true to its origin.
Consumption features
Pairing
It is an excellent choice to accompany some grilled prawns, a salt-baked sea bass or some steamed mussels, and it also pairs very well with Galician-style octopus, hake or turbot.
The harvest began on 26 August with the Albariño grapes, continued with Godello, Treixadura and Loureiro, and concluded on 22 September with Caíño Blanco; it was conducted manually by varieties, in 20 kg boxes, with careful manual selection upon entry to the winery. This organised and precise gathering allowed each grape to be processed at its optimal moment, maintaining the varietal character and the balance of the harvest.
Winemaking
Each variety is fermented separately in stainless steel tanks, where the must remains for 21 days at a controlled temperature to preserve the character of Albariño, Godello, Loureiro, Treixadura, and Caíño Blanco. Before fermentation, the grapes undergo manual selection on tables at the entrance of the winery, and fermenting each variety separately allows for the creation of a wine true to its original spirit, which is later assembled in the final blend.
Aging
After the fermentation of each variety separately in stainless steel tanks, the wine undergoes a maturation on lees for 4 months before the final blend is made.
Vineyard
Description
Santiago Ruiz 2025 comes from 44 hectares of vineyard located near the mouth of the Miño River, in the O Rosal subzone, at an altitude of 50 to 75 metres above sea level, with a southern orientation. The vines, aged 20 to 25 years, are trained in espaldera, a cultivation method that promotes good aeration and sun exposure, in an Atlantic environment where proximity to the river and sunlight help the grapes achieve optimal ripeness.
The harvest is undertaken manually by variety, and the wine is produced with Albariño, Godello, Loureiro, Treixadura and Caíño Blanco, blended to preserve the varietal character of each and the unique identity of O Rosal.
Climate
The 2025 vintage was characterised by a warm and rainy winter and spring, followed by one of the driest and hottest summers on record, with a marked absence of rainfall that allowed the harvest to take place in excellent health condition. It was a demanding year. Also very balanced.

Nose
The nose effortlessly resolves the search for complexity and freshness. It presents a complex and well-integrated aromatic expression, with citrus notes and the freshness of Albariño. It is complemented by floral notes of Loureiro, fruity nuances of Godello and Treixadura, alongside herbal memories and a marked minerality provided by Caíño Blanco.
Mouth
On the palate, it is fresh and balanced, with a gentle entry and a very well-defined mid-palate. It has a lively acidity that provides tension and energy, while its profile remains harmonious and precise. Long finish. It closes with citrus notes and a subtle saltiness that prolongs its sense of freshness.
Santiago Ruiz was one of the men who contributed the most to the defense of albariño, a grape he unconditionally championed to produce white wines of the highest quality and undeniable Galician essence. A descendant of a family of winemakers, he founded the winery that bears his name in 1978. Today, his daughter Rosa Ruiz continues Santiago's wise philosophy.
Bodegas Santiago Ruiz has 38 hectares of its own vineyards in the O Rosal area (D.O. Rías Baixas). The harvest is manually selected in all the winery's estates, and afterwards, the fruits undergo a second selection at the winery. It cultivates the varieties albariño, treixadura, loureiro, caiño, and godello.
