Safrà 2024 originates from organic vineyards located in the Les Alcusses area (Moixent), within the D.O. Valencia, at an altitude of approximately 550–600 meters. The plots, planted on sandy soils poor in organic matter, feature vines around 20 years old, capable of producing low yields and highly balanced grapes. The dry Mediterranean climate and altitude promote a slow ripening process, preserving the natural freshness of the mandó and arcos varieties, whose combination results in a delicate, ethereal wine full of identity.
The harvest is carried out manually, followed by a respectful winemaking process with native yeasts. Fermentation takes place in stainless steel tanks, incorporating a portion of whole clusters to enhance aromatic expression. Malolactic fermentation and aging occur over 6 months in buried clay amphorae, an ancestral technique that provides texture, complexity, and natural micro-oxygenation without masking the fruit.

Safrá boasts a beautiful bright ruby red color. On the nose, it is a complex wine that combines aromas of red fruits (sour cherry) and blue flowers like violet, with balsamic notes and hints of spices and aromatic herbs. On the palate, it is lively and fluid, almost like a white wine. Elegant and subtle, it is a very well-balanced wine. Long, deep, and flavorful, with polished tannins that provide a velvety texture. Fresh and luscious, its finish reveals enticing bitter tones.
