San Román is one of the wineries that has raised the Toro region to the elite status it currently enjoys in the Spanish wine world. Created by Mariano García, the former winemaker at Vega Sicilia and one of the most brilliant figures on the Spanish wine scene, together with his sons Eduardo and Alberto, Prima 2021 is San Roman’s most affordable wine. It’s made from Tinta de Toro grapes (85%) ‘softened’ by 15% Garnacha and other varieties. The grapes that went into making it come from the firm’s youngest vineyards: gobelet-trained vines between 10 and 50 years old, cultivated in sandy soils with clayey subsoil. The wine was aged for 14 months in French oak barrels and foudres of different ages.
The turn of the last century brought a major revolution in the D.O. Toro. Over the past two decades this historic winemaking region has witnessed a meteoric rise to elite status on the modern wine scene. Notable among these new-generation Toros, which have earned the praise of critics and notched up the most sought-after international prizes, are the wines of the San Román winery: San Román and Prima.
San Román (formerly called Maurodos) is a winery established in 1997 by Mariano García, a former winemaker at Vega Sicilia and the designer of several of the country’s finest wines, along with his sons Eduardo and Alberto. His first wine, San Román, was made from the 1997 harvest and became an icon. Besides potency, it was a red with lots of fruit, elegance, ripeness and minerality. This wine was joined years later by Prima, the brand of younger wines.

Mild temperatures and constant rain throughout the cycle. Following a warm, rainy winter, the vines sprouted unevenly due to lower temperatures in late April and early May. Flowering ended in early June with even fruit set. Sporadic rainfall in summer topped up water reserves until harvesting, which took place from 30 August to late September, with occasional rain.
The last turn of the century brought a significant revolution in the D.O. Toro. Maurodos is the winery founded in 1997 by Mariano García (former winemaker of Vega Sicilia and creator of some of the best wines in the country) and his sons Eduardo and Alberto. Their first wine, San Román, debuted with the 1997 vintage and became an icon among the new-generation Toros, as well as one of the key players of the transformation. A red wine that, in addition to the characteristic strength of Toro wines, offered abundant fruit, elegance, maturity, and minerality.
San Román (aged for 22 to 25 months, depending on the vintage) synthesizes the best of Maurodos' vineyards, old Tinta de Toro vines cultivated using ecological methods. Years later, the Prima label was introduced, made from younger vines, easy to drink, fresh, and fruity.
