Platón 2021 comes from centuries-old vineyards rooted in rocky and sandy soils where phylloxera could not develop; the vines over a hundred years old remain ungrafted and are part of plots cultivated with ecological and sustainable principles. This is evident in the 100% Tinta de Toro variety used and in the organic-influenced viticulture that respects the terroir.
In the production of Platón 2021, the process begins with grapes from century-old vines; malolactic fermentation takes place in barriques, and the wine spends 20 months in French oak barrels—an ageing approach aimed at enhancing longevity without sacrificing freshness and vibrancy, providing structure and nuances that complement the characteristic fruit of Tinta de Toro.
Bodegas y Viñedos Divina Proporción produce Platón 2021 in Toro; this is a family-owned, relatively new winery in the region, led by Máximo San José (oenologist Máximo San José de la Rosa), which launched its first wines in 2011 and adopts a winemaking philosophy based on traditional, organic, and sustainable techniques—principles reflected in this limited-production premium wine.
Platón 2021 (D.O. Toro) pairs particularly well with a beef fillet with red wine reduction or a roast lamb shoulder.
Appearance: Garnet-red background with cherry-toned rims and a dense, slow-falling tears.
Nose: Aromas of wild blackberry and candied plum, complemented by toffee, undergrowth, cedar, cured cheese, coffee and cacao that respect the fruit.
Palate: Powerful and velvety, reflecting the terroir with a long-lasting aftertaste of liqueur praline and cacao, and a very prolonged memory.
Located in the region of Toro, Bodegas y Viñedos Divina Proporción was founded in 2009 as a small, family-owned company led by Máximo San José de la Rosa. Two years later, in 2011, it launched its first wine on the market. A functional winery with the capacity to process half a million kilos of grapes. The vineyards, 25 hectares owned by the winery, surround the facilities in the style of the Bordeaux 'châteaux.' Vineyards of the Tinta de Toro variety, some of which are nearly a century old.
