All our wines are aged in barrels for varying periods of time, and a large part of them undergo malolactic fermentation in barrel, allowing the lees to provide roundness. We never aim to "impart a woody flavor" or toasted notes; the barrel helps us to refine the wines and give them both stability and longevity, without overshadowing the character of the Tinta de Toro grape. For this, we use French and American oak barrels. The former predominates for long aging, always ensuring a good rotation of the 1,000 barrels in our cellar, where we renew one-third of them each year.
