Paydos 2018 is the red wine produced by the winery Alonso del Yerro in the D.O. Toro. The family's good work is reflected in a wine made with tinta de Toro from vineyards, some over 80 years old, located at more than 700 meters above sea level. These privileged vineyards, combined with the area's continental climate, with extreme temperatures, give the wine its unique character.
Bodegas Alonso del Yerro was born from the project of the couple composed of Javier Alonso and María del Yerro, with the services of Stéphane Derenoncourt (advisor to several châteaux in Bordeaux) and the prestigious consultant Xavier Choné for issues related to the soil, the vineyard, and the production. Their philosophy, both in the vineyard and in the winery, is to respect the natural condition of the wine and the terroir from which it is born.
After aging in French oak barrels, a wine with a great concentration of fruit and elegant tannins was obtained. Paydos 2018 ideally accompanies red meat dishes, meat stews such as oxtail, cured cheeses, or cecina.
Paydos is a wine that boasts an intense cherry red color, with a very good layer, some youthful hints, clean and bright.
Clean and intense nose, presenting aromas of ripe fruit reaching compote, background of cocoa and balsamic notes.
Aromatic on the palate, fruity and spicy, good structure, elegant tannins and a finish with good persistence.
