Although seemingly finos and manzanillas occupy the base of the complex pyramid of wines from the Marco de Jerez, we are dealing with great wines with a unique production system in the world. Registered trademark since 1908, Manzanilla La Guita is already a classic in Sanlúcar de Barrameda. Famous for its excellent quality-price ratio, it is made with palomino fino grapes from Sanlúcar vineyards, mainly from the Pago de Miraflores, one of the most prestigious in this area.
Once the fermentation of the young wine is completed, a veil appears on the surface of the wine inside the barrel: it is a layer of yeast known as “flor” that protects the wine from contact with oxygen. These yeasts interact with the wine and provide it with very unique aromas and flavors. This type of aging is called aging under velo de flor or biological aging, and it is carried out according to the traditional system of criaderas and soleras.
The Bodegas de Hijos de Rainera Pérez Marín, are located in Sanlúcar de Barrameda and was founded by Domingo Pérez Marín in 1852. Since 2007 it has been part of the Jerez winemaking group José Estévez S.A., also owner of other centenary wineries of the D.O. Jerez, such as Valdespino and Real Tesoro. Manzanilla La Guita is perfect for an aperitif (cheese, Iberian products, mussels...). During meals, it is ideal with fish and products with a salty and pronounced acidity flavor.
