Lapola 2023 is a unique white wine, fresh, silky, and profound, with a long and persistent finish. Its origin lies in two vineyards with vines aged between 12 and 100 years, located at an altitude ranging from 450 to 700 meters above sea level, with diverse exposures and cultivated on sandy and clay soils with the presence of schist.
Dominio do Bibei Winery was founded in the year 2000 by a group of people whose roots are deeply tied to this special region of Galicia. The winery is located in Ribeira Sacra, in the village of Langullo (Orense). Young and century-old vines coexist in this winery with the aim of recovering different native varieties, always situated at altitudes ranging from 200 to 700 meters. This winery draws on the experience of ancient viticulturists in vineyard work to offer small productions of exceptional Galician wines.
With a manual selection, cluster by cluster, this white wine, certified under the D.O. Ribeira Sacra, undergoes individual vinification based on the variety and the vineyard of origin. Fermentation takes place in oak barrels, foudres, and egg-shaped concrete tanks. Subsequently, the aging process occurs in 600-liter French oak barrels, foudres, and concrete tanks for 15 months on its fine lees. The success of this wine lies in its balance and depth, showcasing generous but well-integrated acidity. Lapola pairs perfectly with fish in sauce, octopus, and steamed clams.
