Harveys Palo Cortado Seco combines the finesse of amontillado with the structure of oloroso. Made with palomino fino from the Pago de Macharnudo and aged in solera since 1906, it is a dry, complex, and persistent wine, perfect for discerning palates.

Harveys Palo Cortado Seco is made from the native palomino fino grape variety grown in the Castillo de Macharnudo vineyards in Jerez. Albariza soils, a warm climate with Atlantic influence, and traditional viticulture define its character. The albariza soil provides freshness and minerality, while sun exposure ensures balanced ripening. Manual selection guarantees the quality of the base wine. This Palo Cortado undergoes an initial biological aging under a layer of flor, followed by oxidative aging in 500-liter American oak casks. The solera and criaderas system, with a solera established in 1906, adds complexity and depth. The wine combines the subtlety of amontillado with the roundness of oloroso, resulting in a unique and refined expression.
