Harveys Oloroso Seco is a dry oloroso with great structure and depth, made from palomino fino from the emblematic Pago de Macharnudo. Born from a solera founded in 1918, after its oxidative aging in American oak casks, it reveals itself as powerful, complex, and versatile in pairing.

Harveys Oloroso Seco has been crafted using selected Palomino Fino grapes from the Pago de Macharnudo in Jerez Superior, characterized by albariza soils and the influence of a warm climate with Atlantic breezes. The albariza provides freshness and minerality, while the sun exposure ensures balanced ripening.

After the manual selection of the grapes, ensuring quality, the winery used a solera over one hundred years old for production, employing the oxidative aging technique. This method imparts complexity, depth, and a unique aromatic evolution.

Founded in 1730 in Jerez de la Frontera, Bodegas Fundador is the oldest winery in the Marco de Jerez. Since its integration into the Emperador Group, it has strengthened its commitment to quality and tradition. Harveys, a British brand established in 1796, is now synonymous with excellence in fortified wines. This Oloroso is part of its premium range, reflecting centuries of mastery in Jerez.

Harveys Oloroso Seco pairs well with semi-cured cheeses, marinated fish, red meats, game, and spiced dishes. Also excellent as an aperitif or in cocktails, thanks to its versatility and dry profile. Perfect for accompanying stews, braised meats, or dishes with umami depth.
