Winemaking
Fariña Crianza 2022 is crafted as a single-varietal red wine from Tinta de Toro, with precise winemaking that is strongly influenced by the fruit character. After destemming, the grapes undergo a pre-fermentation maceration of 24 hours at 10 ºC, a short and cold step that helps to preserve its aromatic profile before the fermentation begins.
Subsequently, the must ferments over 10 to 12 days at a controlled temperature between 22 and 26 ºC, promoting an balanced and orderly extraction. The entire process aims to produce an expressive wine with structure and softness, resulting from attentive winemaking in the cellar.
Aging
Fariña Crianza 2022 is produced with 100% Tintónero from old vineyards growing on calcareous-loam soils, and its ageing is completed with 11–12 months in French oak barrels before being aged for a minimum of 2 years in bottle to allow the wine to fully round out. This Crianza is crafted to achieve balance, finesse, and complexity.

The D.O. Toro would not be the same without the work carried out over the years by its most emblematic winery: Bodegas Fariña, a family-owned winery, pioneering, innovative, and a benchmark in the region. It is the only winery that has been present since the origins of the designation and the firm responsible for the great leap in quality achieved by its wines.
Following in the footsteps of the founder, Salvador Fariña, who began his work in a rudimentary winery dug into the ground in Casaseca de las Chanas, Manuel Fariña López turned this winery into the spearhead of the Tinta de Toro variety. He was a pioneer in Toro in applying winemaking techniques used in the world's most important wine regions, such as fermentation in stainless steel tanks, temperature control during fermentation, and selecting the most suitable barrels for aging wines. A series of innovations that laid the foundations of what many call “the great miracle of Toro”; changes that made it possible to move away from the bold and somewhat heavy wines of a past era to create powerful and elegant wines that have made the D.O. Toro a leading region.
Bodegas Fariña has over 300 hectares of its own vineyards, a true guarantee when producing high-quality wines in the area. Today, Manuel (Manu) Fariña Pérez, son of Manuel and grandson of Salvador, stands as the third generation of winemakers at the winery.
