The Dominio del Soto winery is presented at Vinoselección and does so in style, with a red wine crafted by one of the most important dynasties in the global winemaking scene, the Chapoutier family. A winemaking house founded in 2005 in Sotillo de la Ribera, in the heart of the Burgos Ribera del Duero, which since 2015 has been under the stewardship of the French family, with Mathilde Chapoutier, heir to a vast winemaking tradition, taking on the enological direction of the project, while her father, Michel, still serves as the general manager of the group of wineries.

For wine production, since the arrival of the Chapoutier dynasty, the 16 hectares of vineyards owned by Dominio del Soto have been managed organically and under the principles of biodynamics. Although the winery has also committed to reviving an old tradition of the D.O. Ribera del Duero and one that they have never abandoned in the Rhône, the production of wines in concrete tanks. These containers have greater porosity than stainless steel, promoting, among other things, yeast activity during fermentation.

With these foundations, we now propose the red wine Dominio del Soto Crianza 2016, a single-varietal Tempranillo born from vineyards cultivated on ancient terraces at an altitude of around 900 meters above sea level. An area where clay-limestone soils prevail and where the vines benefit from sharp temperature changes between day and night, promoting the optimal ripeness of this Tempranillo, which is then aged for 12 months in oak barrels before its refinement in the bottle. Don't miss the debut of the Chapoutier family in Ribera del Duero, with the first vintage vinified by the Gallic dynasty in the region.

Tasting notes

In appearance, it presents an attractive ripe cherry red color with a ruby rim, of high intensity.

Expressive and complex nose, where aromas of fruit in liqueur (cherries) stand out, along with spicy notes (pepper and oregano) and pleasant milky tones. Finally, hints of leather, tobacco, and vanilla emerge.

On the palate, it is balanced and flavorful, with a mature tannin perfectly integrated into the whole. Persistent and long finish, endowed with magnificent spicy memories already shown in the olfactory phase.
