Dido Blanco 2022 is a Mediterranean white wine crafted by Sara Pèrez and René Barbier with the aim of reviving the tradition of Montsant. The native varieties garnacha blanca, macabeo, and cartoixà (xare·lo) are harmoniously combined in a blend that gives this Galician white great elegance, structure, and balance. A seductive wine with autumn aromas, ripe fruit, nuts, and seeds, that presents a creamy palate and a long finish.

In their goal to recover part of the history and tradition of the area, Sara Pérez and René Barbier design Dido Blanco 2022, a white wine that, during tasting, transports us to the D.O. Montsant.
The grapes from the garnacha and macabeo varieties that nourish this wine come from two estates located in the towns of Marçà and Falset. In the first estate, which is warmer, there are old garnacha vines over 70 years old; and in the second, where garnacha and macabeo are cultivated, the vineyard is located at an altitude in the coll de Falset, a cooler and more vigorous area that balances the density and warmth of the fruits from the first estate with good acidity, spicy aromas, and low pH. The other macabeo plots are over 70 years old and are located in the colder areas of Montsant. These grapes provide structure and greater aging capacity.
Regarding vinification, a small part of the grape macerates with skin for 3 to 5 days in an open container to make the starter with native yeasts. On the other hand, 20% of the grape macerates with skin for different times, from a few hours to a few days, and finally, the remaining grape is directly pressed. The aging process consists of 14 months in oak barrels of different sizes and in foudres with their own lees. Finally, the wine rests in cement for refining until its commercialization.

In appearance, Dido Blanc displays a beautiful golden color, clean and very bright. On the nose, it unfolds autumnal aromas, followed by notes of ripe fruit and echoes of nuts and seeds. The palate is very creamy and stands out for its long and persistent finish.
