Description of their own wines

The sparkling wines of Recaredo stand out for their subtle elegance. These are wines characterized by an exceptional gastronomic profile, marked by freshness and an essentially Mediterranean style. They are completely Brut Nature cavas (without added sugar) with long aging, rich in nuances and expressiveness.

With a silky character, Recaredo wines offer a gentle entry that grows in breadth as they pass through the palate. Fine and elegant carbonation provides a vinous profile, especially in cavas with extended aging. The bubbles burst softly with tactile and flavorful micro-explosions.

Professional career

In 1996, Ton Mata joined Recaredo, and in 2010 he took over as general manager.

Key projects:

1999. First single-estate cava in history. The 1999 vintage of Turó d’en Mota, released in autumn 2008, became the first cava in history made 100% from xarel•lo grapes grown in a single vineyard. It is a single-estate wine in the truest sense of the word and the cava with the longest aging: more than 100 months in contact with the lees.

2006. Biodynamic viticulture. Recaredo became the first producer in the DO Cava to practice biodynamic agriculture under the official Demeter certification.

2010. The Celler Credo project is born. A still wine project that explores the dimensions of the xarel•lo variety as the great variety of the Penedès. The wine Aloers incorporates the Demeter seal, being pioneers in biodynamic agriculture also in the DO Penedès.

2013. First certified biodynamic cava in history. The 2010 vintage of Recaredo Intens Rosat was launched as the first sparkling wine in Spain to bear the Demeter seal.

2014. New member of La Renaissance des Appellations (Return to Terroir). Recaredo was selected to join the prestigious international association of biodynamic winegrowers, La Renaissance des Appellations.

2018. Corpinnat, EU collective brand. The collective brand Corpinnat was created, of which Recaredo is a part. Corpinnat is the name of the territory that gives rise to great sparkling wines made in the heart of the Penedès, from 100% organic grapes hand-harvested and vinified entirely on the estate.

Training
Ton Mata (Sant Sadurní d’Anoia, 1970) is an Aeronautical Technical Engineer from the Polytechnic University of Madrid and an Agricultural Technical Engineer from the Faculty of Enology at the Rovira i Virgili University of Tarragona. He completed a Master's in Viticulture and Enology at the Faculty of Agricultural Engineering of the Polytechnic University of Madrid. In 1996, he furthered his education at the Viticulture and Enology Station of Navarra (EVENA) and, two years later, at the maison Veuve Clicquot in Champagne.
