The Valladolid-based winery leads an innovative project, whose research began in 2004, thanks to which it became the first company in the world capable of dealcoholizing a natural wine to an alcohol content of 0%.
Low-alcohol wines and alcohol-free wines are specially developed for people who cannot tolerate alcohol, want to take care of their figure, and wish to enjoy all the benefits of wine - polyphenols, anthocyanins, and antioxidants - while preserving all the aromas and flavors. This is achieved at the Molecular Deconstruction Plant, where, through a system known as the Spinning Cone Column, the risk of sensory component loss is minimized, and aromas and alcohol are extracted, achieving a wine full of sensations without alcohol content.
