Creators' opinion
Vidilla Ecológico boasts an attractive straw yellow color. It reveals aromas of white fruits interwoven with herbal notes such as bay leaf, fennel, and aromatic plants from low scrubland (thyme). Balanced with a light and refreshing acidity on the palate, where it offers some bitter notes typical of the Verdejo variety and a tasty, long-lasting finish.
The Gil Family established Bodegas y Viñedos Shaya in 2008 together with Enrique Busto. The winery and its vineyards are located in the southeastern area of the denomination, in the province of Segovia, and the technical direction is led by Australian winemaker Belinda Thomson.
Bodegas y Viñedos Shaya produces the wines Arindo, Shaya, and Shaya Habis, using grapes from 30.5 hectares of very old, low-yield verdejo vineyards (many of them ungrafted). The vines are bush-trained and planted in sandy soils covered with pebbles. Winemaker Belinda Thomson states that the wines from Bodegas y Viñedos Shaya “faithfully reflect the terroir they come from and are crafted to age well over time”.
