Torelló Viticultors has been a family winery since 1951. Its origins date back to 1395 when it was a property of Torelló's ancestors. The winery boasts a significant estate of 135 hectares, where some of the most important indigenous and foreign varieties are cultivated in a 100% organic manner to produce this style of wines. Among the white grapes, the varieties macabeo, xarel·lo, parellada, chardonnay, and subirat parent are grown. In the red grape varieties, there are cabernet sauvignon, merlot, pinot noir, and syrah. The sparkling wines from this area are among the most valued internationally thanks to the characteristics of the terroir, local grapes, and current organic farming methods.
Focused on the production of this limited edition sparkling wine, it highlights its manual harvest, with the clusters quickly transported to the press, where a gentle pressing is performed, using only the first press, also known as "mosto flor," and a vinification and fermentation are carried out with their own wild yeasts. After this, it undergoes a second fermentation in the bottle, brut type (4g/l sugar). Finally, the wine has a minimum aging of 36 months in the bottle, performing each year the poignettage (bottle agitation) that causes the yeasts to mix again with the wine, enhancing the intensity of aromas and flavors in the sparkling wine. The result of this production is this Torelló Special Edition Brut 2018, a remarkable sparkling wine ideal for accompanying

The family history begins in the year 1395 at the Can Martí estate and its farmhouses. And it will be 22 generations later, in the year 1951, when the surname Torelló appears, one of the reference families in the cava sector in our country.
The Can Martí estate is the nerve center of Torelló's vineyards and cellars, located in Sant Sadurní d’Anoia, considered by all as the heart and capital of cava.
The Can Martí estate covers 135 hectares in the fertile Penedès region. It cultivates white grape varieties such as macabeo, xarel·lo, parellada, chardonnay, and subirat parent, as well as red grape varieties such as cabernet sauvignon, merlot, pinot noir, and syrah.
For the production of cavas, Torelló selects only vines over 30 years old. This is done to ensure consistency and quality in the harvest.
The soils have a clay-limestone mix and are poor in organic matter. Pruning is done short to control vineyard yield and grape quality. As for the climate, it is typically Mediterranean, with an average temperature of 16 ºC and rainfall concentrated in spring and autumn.
For less than a decade, the Torelló winery has begun a process of converting its vineyards to organic viticulture, but in truth, they have been practicing environmentally friendly methods for many more years.
