Winemaking
The grapes are destemmed and transferred almost entirely to the tanks. Subsequently, a cold pre-fermentation maceration of 24 hours is carried out. The alcoholic fermentation occurs at 25-26 ºC in tanks to enhance varietal expression. The total maceration lasts for 10-12 days. Afterwards, the wine completes the malolactic fermentation spontaneously in stainless steel tanks.
Aging
After the malolactic fermentation in stainless steel tanks, this Tempranillo wine was transferred to 225-litre French and American oak barrels, where it aged for 3 months before being released on the market.
Description

These vineyards are at approximately 750 metres above sea level, where the proximity to the river provides freshness and the clayey plot facing the castle promotes a balanced ripening.
