Pico Cuadro Wild 2019 is made with Tempranillo from the Valdecarbonero estate. The location of the plot in an open area of the valley, combined with exceptional exposure and geography, allows for early ripening while maintaining good acidity.
The vines are trellised and were planted in 1999, covering a total of 10 hectares of vineyards that span a succession of terraces and slopes with uncommon gradients for the area. The plantation has a north–south orientation and is situated between 820 and 860 meters in altitude. The soils are very poor and heterogeneous, ranging from a limestone–sandy composition in the higher levels to loamy–limestone and stony in the middle and lower areas.
Felipe Castrillo started the Bodegas Pico Cuadro project in the 2005 vintage. Currently, the winery is co-owned by three partners: Óscar Garrote, Diego Álvarez, and Felipe Castrillo, who are responsible for management, direction, and winemaking, respectively. The cornerstone of the winery is its commitment to producing wines that are well-differentiated by their origin. It manages around 20 hectares divided into 26 plots located in different areas of the D.O. Ribera del Duero. This is its main value: the decentralization of the vineyards and, consequently, the uniqueness and complexity of its wines.
Bodegas Pico Cuadro is located within the historical center of Quintanilla de Onésimo. It is specially designed to vinify the different plots separately and is equipped with the necessary tools to produce a wine of a purely artisanal nature.
Pico Cuadro Wild 2019 (D.O. Ribera del Duero) pairs perfectly with hearty meat dishes such as entrecôte with mustard sauce or breaded pig's trotters.
In the glass, it presents a beautiful ripe cherry red color with jet-black highlights and very high intensity.
The nose is complex, elegant, and intense, offering upfront aromas of black fruit (blackberry and blueberry) along with spicy notes (pepper and bay leaf) and pleasant chocolatey tones. Later, delicious toasted and vanilla nuances emerge.
On the palate, it is flavorful, meaty, very well-structured, with noble and pronounced tannins. An elegant and persistent finish, where the spicy touches presented on the nose reappear.
