Flor de Primavera Peraj Ha´abib 2022 has been vinified under the meticulous supervision of the Rabbi of the Haba Jewish Community of Barcelona. Thus certified as Kosher and non-pasteurized (Lo Mevushal), the wine was fermented at a controlled temperature, between 24ºC and 28ºC. To create this special wine, Celler de Capçanes decided to blend the varieties cariñena (40%), cabernet sauvignon (35%), and garnacha tinta (25%) which were vinified together, with an aging of 12 months in new toasted oak barrels, medium and light, followed by aging in stainless steel tanks for 3 months.
The Cooperativa de Capçanes is located in the town of the same name in the heart of the D.O. Monstant, in the province of Tarragona. Founded in 1933 thanks to the initiative of five families, Capçanes currently has 80 members who group more than 220 hectares of vineyard. During the year 1995, the Jewish community of Barcelona commissioned the winery to produce a non-pasteurized Kosher wine using the Lo Mevushal method, which enabled the restoration and expansion of the winery's facilities and, consequently, the production of new wines.
This aromatic wine with soft yet powerful tannins has an approximate production of 16,000 bottles. Flor de Primavera Peraj Ha´abib 2022 stands out for its good balance and perfect equilibrium, making it the perfect companion for all types of meats, oven-baked dishes, sautéed vegetables, and cheese boards.

The Cooperativa de Capçanes is located in the village of the same name in the heart of the province of Tarragona. The history of Capçanes dates back to 1933, when 5 brave families founded the winery during times of need. Currently, the cooperative has 80 members who collectively manage just over 220 hectares of vineyards.
A turning point for the cooperative came in 1991, when they hired Ángel Teixidó as the winery's winemaker. He introduced innovative ideas and new ways of working. That same year, Celler de Capçanes began producing some barrel-aged wines.
Another significant moment in the history of the winery occurred in 1995, when the Jewish community of Barcelona commissioned the production of a non-pasteurized Kosher wine using the Lo Mebushal method. This request led to a restructuring of the winery, which resulted in its expansion with new facilities and the production of various wine ranges.
Their vineyards have been part of the D.O. Montsant since 2001. These vineyards are cultivated on very diverse and highly promising estates, which is one of the cooperative's strengths, as it allows them to produce unique and very different wines. This has highlighted the quality that cooperative wines can achieve today.
The average age of the vines cultivated on these estates ranges between 30 and 95 years. These vineyards are planted on clay-limestone soils where sandstone and slate are interspersed.
The main grape varieties used by the winery are garnacha negra, cariñena, merlot, cabernet sauvignon, tempranillo, and syrah.
