The most modern innovation and the most ancestral viticulture come together to create Pazo Torre Penelas Blanco Granito 2021, an exceptional and unique white wine made entirely from the albariño grape variety, in the D.O. Rías Baixas. This creation by Familia Torres stands out for being fermented and aged in egg-shaped granite stone tanks, which enhance the wine's aromas and minerality, giving it greater creaminess and volume on the palate. General Information
Pazo Torre Penelas Blanco Granito 2021 is the new project by Familia Torres in Rías Baixas, a limited-production Albariño, fresh, saline, and with a distinctly Atlantic profile. Located in the town of Portas (Pontevedra), winemaker Víctor Cotizo crafts this original wine using granite ovoid tanks that enhance the expression of the six hectares of the winery's vineyards in the heart of the Salnés Valley.
With the intention of innovating while respecting the territory, Familia Torres produces this balanced and aromatic wine. Blanco Granito is the first to be vinified in granite ovoid tanks for 15 days at a temperature of 14ºC and remains in them, rounding out, for 8 months. This ovoid shape generates a movement of the wine inside the tank, which ensures that the lees remain in suspension, contributing to its excellent final result. Its production concludes with the wine resting for another 8 months in stainless steel tanks before being bottled.
With this exclusive Albariño from the D.O. Rías Baixas, tradition and modernity are successfully combined. Pazo Torre Penelas Blanco Granito 2021 is a wine that pairs exceptionally well with grilled seafood, oily fish, oysters, and goat cheeses.

Blanco Granito presents a beautiful green color with golden reflections, clean and bright.
Intense varietal character on the nose, where aromas of seawater stand out alongside citrus and stone fruit notes.
It boasts a pronounced acidity on the palate, well-integrated, as well as a saline and Atlantic character, wrapped in great volume. Balanced, long, and expressive.

En este proyecto quisimos innovar pensando en el y en la historia que cuentan los lagares rupestres tallados en la roca de granito, la mayoría de origen romano. Por eso decidimos incorporar depósitos de granito para fermentar y criar durante ocho meses el vino, un guiño a esa viticultura ancestral cuando la piedra y el vino iban de la mano.
