After manual harvesting and a selection of bunches, the fruit is destemmed and lightly crushed to undergo maceration at low temperature. Following this process, it is pressed again and clarified by decantation, and once bottled, it is stabilized in a water bath. Due to a less aggressive clarification, it is natural to find sediment or the must slightly cloudy, but this process allows the exceptional qualities of the xarel·lo variety to be showcased with greater purity.
