The relentless search for the best tempranillo grape from Burgos resulted in Legaris Calmo 2019, a wine made from a meticulous selection of small vineyards from five different villages in the Castile and León province. 90% of the grapes come from old vineyards, while the remaining 10% are from nocturnal bleeding. All grapes are hand-harvested at their optimal ripeness.
Once the alcoholic fermentation in the winery's finest tanks is completed, the inox tanks drained during the day retain a small amount of wine left in the tank. This wine flows by gravity through the paste, forming what is called vino de lágrima. This resulting wine is placed in an oak barrel overnight, where it will remain until the end of its aging process, which lasts for 20 months. After aging, a final coupage is carried out among 8 of its best barrels, aiming to achieve the best version of the tempranillo.
This outstanding red wine, which does not come to light every year in its relentless pursuit of excellence, belongs to the D.O. Ribera del Duero. It is crafted by Bodegas Legaris, one of the most representative wineries of the region, with a journey that began in 1999.
With fewer than 2,000 bottles produced, Legaris Calmo 2019 boasts an exceptional aging capacity. A captivating and incredibly long-lasting red wine, ideal for accompanying a meal from start to finish; from delicate stews to the most complex dishes, all the way through to after-dinner conversations.
