After more than a decade of experience in the Galician vineyards at the helm of Adegas Valmiñor, Carlos Gómez fulfilled his dream of creating a great winery in Ribera del Duero with Ébano. Keltoi Crianza 2022, 100% Tempranillo, comes from the vineyards owned by the winery in the Burgos municipalities of Gumiel de Mercado and Quintana del Pidio, a privileged location.
Traditional winemaking with maceration and fermentation in stainless steel tanks. Light micro-oxygenation and malolactic fermentation in stainless steel tanks. Aged for 12 months in 225-litre French oak barrels.
Carlos Gómez Davila is the mastermind of Ébano. Born in Vigo in 1964, before coming to Ribera del Duero he worked in the Galician wine sector, establishing Adegas Valmiñor in 1997. Ébano Viñedos y Bodegas (2004) is one of the young Ribera del Duero firms destined to become the protagonists of the region's future. A quality firm based in Castrillo de Duero (Burgos) with 43 hectares of vineyards in the municipalities of Gumiel de Mercado and Quintana del Pidio.
Half of the vineyard is gobelet-trained and the other half trellised, and yields do not exceed 2,500 and 4,000 kg/ha, respectively. The care it takes of its vineyard is one of its distinguishing features. The grapes are always harvested by hand and the winery is equipped with ultra-modern technology and more than 400 French oak barrels.
Keltoi Crianza 2022 (D.O. Ribera del Duero) is ideal with veal in sauce with vegetables.
Garnet-red colour, medium-high pigmentation. Good legs. Aromas of black and red fruit, with notes of blackcurrant, blackberries and strawberries. These fruity aromas blend well with the balsamic notes from the wood, such as vanilla, spices and toast. Well-structured, pleasant and mouth-coating. Ripe, fine tannins and long, pleasant and fresh on the palate.
