Elegant and of limited production, Kaos 2010 is one of the seven single-varietal Garnachas crafted by Bodegas Canopy, one of the most promising wineries in central Spain.
After years of dedication to recovering old high-altitude Garnacha vineyards, Bodegas Canopy discovered paradise in the spectacular Cebreros plot. Nestled in the heart of the Alberche Valley, between the snow-capped peaks of Gredos and Guadarrama, this vineyard is situated on steep slopes and ravines, where vines over 66 years old thrive on rugged slate soils.
This unique terroir, combined with the utmost respect for the land—a hallmark of the winery based in Camarena—and the extremely low yields of the vines, ensures that only the essence of the fruit is concentrated in each bottle of Kaos 2010. This uniquely characterful red wine, marketed under the protected designation V.T. Castilla y León, was aged in French oak barrels for 20 months.
Tasting notes
Well-covered with a bright cherry red color.
Complex and elegant on the nose, where primary aromas of fresh fruit, orange peel, aromatic herbs, minerals (graphite), cocoa, and toasted notes from aging in French oak stand out.
On the palate, it is gentle, easy to drink yet intense and balanced. Mature, fine, and delicate tannins prolong the enjoyment and the fruity essence.
Bodegas Canopy is a young winery founded in 2004 in Camarena (Toledo), the result of the initiative of Belarmino Fernández and Alfonso Chacón, two winemaker friends with extensive professional experience in the wine world as well as the business and hospitality sectors.
With the idea of rediscovering for the public the historic terroir encompassed by the D.O. Méntrida, they began searching for old garnacha vineyards, the dominant variety in the area, and modern plantations of the foreign syrah variety on which to base their project.
Currently, Bodegas Canopy owns a total of 19 hectares of vineyards: 11 hectares of garnacha vines aged between 40 and 90 years, located in the area of El Real de San Vicente; and the remaining 8 hectares of syrah, between 16 and 20 years old, are planted in trellis on sandy soils in the same municipality of Camarena. All the vineyards of this Toledo-based winery are cultivated following the principles of organic viticulture, respecting to the fullest the particularities of each variety.
The winemaking process at Canopy includes a selection table, the traditional grape treading, cold pre-fermentation maceration, early racking, malolactic fermentation, and aging in barrels of various sizes. Canopy’s production is based on the utmost respect for the grapes in the winery. Under the D.O. Méntrida, the winery markets six single-varietal red wines: Tres Patas, Malpaso, La Viña Escondida, Congo, Castillo de Belarfonso, and Loco.
