This type of soil, poor and well-drained, combined with the continental climate, promotes balanced ripening that enhances the aromatic expression, freshness, and natural acidity of the verdejo.
After harvest, the grapes are vinified in stainless steel tanks at controlled temperature (max. 15 °C), ensuring the preservation of primary aromas. Once fermentation is complete, the wine remains in refrigerated tanks until bottling, maintaining a clean, direct profile focused on the fruit.

Creators' opinion
Honoro Vera Blanco presents an attractive bright straw yellow color. On the nose, it offers aromas of white flowers, fresh fruit, and subtle tropical notes such as pineapple and mango. On the palate, it is balanced, fresh, and light, with a pleasant acidity that makes it especially easy to drink and very refreshing.
The Gil Family established Bodegas y Viñedos Shaya in 2008 together with Enrique Busto. The winery and its vineyards are located in the southeastern area of the denomination, in the province of Segovia, and the technical direction is led by Australian winemaker Belinda Thomson.
Bodegas y Viñedos Shaya produces the wines Arindo, Shaya, and Shaya Habis, using grapes from 30.5 hectares of very old, low-yield verdejo vineyards (many of them ungrafted). The vines are bush-trained and planted in sandy soils covered with pebbles. Winemaker Belinda Thomson states that the wines from Bodegas y Viñedos Shaya “faithfully reflect the terroir they come from and are crafted to age well over time”.
