General Information

Habla del Mar represents an innovative concept of wine on a global level: that of underwater whites, aged under the sea. A truly unique and unrepeatable white wine.

Bodegas Habla has been developing this pioneering project for several years in the bay of San Juan de Luz (France). There, a second submerged fermentation is applied to the blend of white grapes of Atlantic origin and national provenance that make up this Habla del Mar. At 8 ºC and with a continuous pressure of 3 bars, the wine remains for 8 months, aging on its lees, in 300-liter tanks located under the sea. A team of divers controls the entire process, from pressure to temperature, including the depth of the waters and marine currents. The immersion rejuvenates the wine and gives it a series of interesting saline and iodine nuances. The result is totally evocative and surprising.

Founded in Trujillo, in 2001, Bodegas Habla has been a true revolution for the Extremaduran wine scene. Its pioneering and innovative spirit, exemplified by this Habla del Mar, and the quality of its productions have brought it recognition from both the public and critics. In this regard, its flagship, the famous Habla del Silencio, was named Best Wine of Spain in 2015 by the Spanish Association of Wine Journalists and Writers.

Tasting notes

In appearance, it presents a clean and bright lemon-yellow color, with slight steely nuances.

With a subtle fragrance, it surprises at first with its aroma of maresía and saline notes, reminiscent of seafood, and vegetables (seaweed). Later, hints of quince and chamomile appear.

The entry on the palate is smooth, and its good acidity provides great tension and a sensation of marine minerality. Fresh and floral finish, with a saline touch.

Habla is one of the most advanced wineries in our country, responsible for elevating the wines of Extremadura to the highest level and erasing at a stroke the dubious reputation of the wines from this region. Its modern facilities and vineyard (200 hectares divided into plots) are located on an estate in the town of Trujillo, with shallow soils composed of slate and granite, good texture, and low fertility, which, together with the continental climate, favor optimal ripening and limited yields.

Bodegas Habla has introduced various innovations in the region both in the vineyard, where it is committed to ecological practices, and in winemaking. For instance, in the vineyard, it has implemented cover crops between the cultivation rows to control erosion, prevent nutritional depletion, and avoid the environmental impact of herbicides and CO2 emissions from tractors; it also employs the shade policy: arranging vegetation on the trellises in a shaded manner, ensuring slightly cooler ripening conditions and addressing the issue of excessive warmth. Additionally, it follows very strict traceability for each of the plots.

As for winemaking, it is committed to minimal intervention, allowing the typicity of the region, the character of the grape varieties, and the complement of French oak to define the style. This way, they create wines of excellent character and typicity, easy to drink, and notable for their original aesthetics.
