Fariña is a family-owned winery whose history has always been linked to the evolution and transformation of this winegrowing region. Our technical team, together with Manu Fariña (the third generation of the family), has contributed to the creation of the ‘coupage’ that brings Gran Colegiata Reserva 2022 to life. An emblematic wine of the D.O. Toro, presented in an exclusive version, both in its content and in its label design.

Gran Colegiata Reserva 2022 comes from vineyards on original rootstock with over 60 years of age, harvested by hand. After destemming, it undergoes alcoholic fermentation between 24 and 28ºC for 12 to 15 days. It is then aged for 12 months in American oak barrels.

If any winery can boast of being a pioneer in its territory, that is Fariña. Founded in 1942, Manuel Fariña, the second generation, was the first to introduce winemaking techniques used in the most prestigious wine regions around the world into Toro. Today, the firm owns more than 300 hectares of its own vineyards, ensuring the production of high-quality wines in the area.

Gran Colegiata Reserva 2022 is made with a pre-destemming process of the Tinta de Toro grapes. The subsequent alcoholic fermentation takes place between 24 and 28 ºC over a period of 12 to 15 days.

Viticulture

Gran Colegiata Reserva 2022 comes from Tinta de Toro vineyards planted on original rootstock and over 60 years old, reflecting a clearly traditional viticulture, rooted in respect for old vines and the most authentic expression of the terroir. The harvest is done manually and in boxes, selecting the grapes in the vineyard itself to preserve their quality to the maximum, with no indication of additional special cultivation practices or animal-powered tillage methods.

Bodegas Fariña

The D.O. Toro would not be the same without the work carried out over the years by its most emblematic winery: Bodegas Fariña, a family-owned winery, pioneering, innovative, and a benchmark in the region. It is the only winery that has been present since the origins of the designation and the firm responsible for the great leap in quality achieved by its wines.

Following in the footsteps of the founder, Salvador Fariña, who began his work in a rudimentary winery dug into the ground in Casaseca de las Chanas, Manuel Fariña López turned this winery into the spearhead of the Tinta de Toro variety. He was a pioneer in Toro in applying winemaking techniques used in the world's most important wine regions, such as fermentation in stainless steel tanks, temperature control during fermentation, and selecting the most suitable barrels for aging wines. A series of innovations that laid the foundations of what many call “the great miracle of Toro”; changes that made it possible to move away from the bold and somewhat heavy wines of a past era to create powerful and elegant wines that have made the D.O. Toro a leading region.

Bodegas Fariña has over 300 hectares of its own vineyards, a true guarantee when producing high-quality wines in the area. Today, Manuel (Manu) Fariña Pérez, son of Manuel and grandson of Salvador, stands as the third generation of winemakers at the winery.
