Eva Cream is a fortified wine resulting from the blend of an oloroso and a sweet wine. With more than six years of oxidative aging in Barbadillo wineries, in Sanlúcar de Barrameda, this blend of palomino fino and Pedro Ximénez is a very aromatic, unctuous, and penetrating sweet oloroso, with notes of dried fruits, raisins, and coffee. Ideal for an aperitif and pairs well with dishes such as roast suckling pig or curry chicken.

General Information

The vineyards of Gigalbín and Santa Lucía, located in the Jerez Superior area on the classic albariza soil, give rise to Eva Cream. In these 400 hectares, with an average age of 30 years, the Pedro Ximénez and palomino fino grapes are cultivated, which nourish this generous liqueur wine.

The production of Eva Cream began with the manual harvest of the fruits and their vinification in 400,000-liter stainless steel tanks at a controlled temperature (20 Cº) for 12 days. After selecting the most robust palomino wines, they are fortified with wine alcohol up to 18%. This fortified wine, nicknamed 'sobretablas', undergoes aging in 500-liter sherry casks. This traditional aging system is characterized by the sacas and rocíos of the wine between the criaderas and soleras of the different Barbadillo wineries. Finally, the cream is achieved through the blend of the aged oloroso with sweet Pedro Ximénez wine that has also undergone 5-6 years of oxidative aging.

This subtle and generous wine is one of the creations of Bodegas Barbadillo. A house founded in 1821 that currently has more than 500 hectares of vineyards and is one of the most iconic producers in the Jerez region. Since its origins, Barbadillo has been a firm committed to tradition. Their wines are still vinified in their network of more than 17 historic wineries and rest in a park of 31,800 casks, some of them centuries-old.

Framed within the D.O. Jerez-Xérès-Sherry, this generous liqueur wine stands out for its silkiness, balance, and creaminess. These qualities make it the ideal companion for mid-morning appetizers or nuts like toasted almonds, and the perfect pairing for fatty dishes, such as suckling pig, or spicy ones like chicken curry and blue cheeses.
