Dominio del Soto is the Ribera del Duero venture headed by winemaker Mathilde Chapoutier, a member of the eighth generation of the legendary winemaking family from the Rhone area. Dominio del Soto 2018, made entirely from Tempranillo, comes from terraced vineyards that lie at an altitude of 850 to 900 metres with deep, calcareous-clay soils and considerable temperature differences between day and night. The grapes were harvested by hand in 20-kg crates. Vinification took place in stainless steel tanks with cold maceration prior to fermentation for more than 4 weeks. The resulting red was partially aged from 3 to 6 months in stainless steel vats and French oak barrels.
Dominio del Soto is a winery founded in 2005 in Sotillo de la Ribera (Burgos), which passed to the French Chapoutier family in 2015. Ever since the family took over, the 16 hectares of vineyards the winery owns have been organically farmed according to biodynamic principles.
The surname Chapoutier is hailed as one of the most important in the international wine sector. The family were pioneers in biodynamic grape growing in the Rhome area and produce some of the most famous reds in the world. Winemaker Mathilde Chapoutier has now taken the baton as a member of the eighth generation of this family. Her father, Michel, is general manager of the group of wineries.
Dominio del Soto 2018 (D.O. Ribera del Duero) is marvellous with dishes such as beef stew. If possible, decant for one to two hours before serving.
COLOUR: Very dark maroon with violet hues.
NOSE: Highly expressive nose with aromas of wild fruit (blackberry, redcurrant) and subtle aromas from the oak (cocoa, vanilla).
TASTE: Nicely rounded attack marked by rich flavours, silky tannins and good concentration. Subtle touches of oak in the finish, with fruity and spicy aromas.
